Butter Roasted Turmeric Mushrooms

So the website that had Connor’s favorite mushrooms died (and now oddly redirects to “Disney Recipes” webpage).  So I’m putting this up so I can find it again in the future.

Butter Roasted Turmeric Mushrooms

6 ounces crimini mushrooms, whole

6ounces white button mushrooms, whole

1 tablespoon ground turmeric

1/2 ounce fresh ginger, peeled and thinly sliced

1 sprig fresh rosemary

1 sprig fresh thyme

Pinch of salt

1/4 teaspoon black pepper

2 tablespoons olive oil

2 ounces unsalted butter

2 tablespoons soy sauce

Crusty bread (optional)

Preheat oven to 500 degrees F. Toss crimini and button mushrooms with turmeric, ginger, rosemary and thyme.

In a preheated medium sautéed pan add olive oil, then butter. Allow butter time to lightly brown then add mushrooms, salt and pepper. Toss gently, then place in hot oven for 9 minutes (6 minutes if using a convection oven), tossing once halfway through cooking.

Remove from oven -> REMEMBER THE PAN HANDLE IS HOT! Add soy sauce, gently toss again, and serve in a warm bowl with crusty bread.
