Quiche with goat cheese and greens

Have you noticed that I like goat cheese?   Feel free to use whatever cheese you like, just about anything is good in this easy, delicious quiche.  This is a basic recipe that I just kind of made up, and here’s how it came together this morning.

Quiche with goat cheese and greens

– 1 bag of trader joes mixed southern greens, or about 1lb of collards, spinach, mustard,
or any other kind of green
– 2-3 cloves garlic, minced
– 1 onion
– 6 oz goat cheese
– 5 eggs
– 3/4 cup milk
– 1 tsp herbed de Provence
– trader joes frozen pie crust
– salt and pepper to taste

Sauté garlic, onions and greens until greens are fully cooked but still a little tough, ~10-15 min, depending on the greens. Preheat oven to 350. Put crust in pie pan, then crumble half the goat cheese on the bottom. Add greens mixture on top of cheese and spread evenly. Beat eggs, milk, Hermes de Provence, salt, and pepper, then poor over greens. Crumble remaining cheese on top, then bake for 40 minutes. Allow to sit for 10 minutes after cooking is done.
